Here are excerpts from an Interview:
How many years in the Food Industry?
Started-off professionally in 1997 with the Taj Mahal Hotel and then as Sky Chef for Kuwait Airways. Prior to that, I Interned with the Sun ‘n’ Sand Hotel.
How did your Journey start?
Like most Sindhi Boys & Girls, I’ve always been interested in Food and Cooking. My first memory of Cooking was alongside my mom in the kitchen. By age 9, I could cook a full Sindhi meal. My mom was the first to notice my interest in cooking and supported me despite what the rest of the family had to say.
Post my Board exams I graduated in Hotel Management and Catering Technology in Mumbai followed by a Certification in the Swiss Hotel Management University.
What are you currently doing?
Vice Principal at the Kohinoor College of Hotel & Tourism Management Sudies, Mumbai.
Why did you choose to be in this Industry?
I was always passionate about Food and Cooking. So, it seemed to be the most natural choice.
How many countries have you worked in so far?
Kuwait, Thailand (for an Indian Cusine Workshop), Bahrain and of course in India.
What’s the best thing about your job?
It gives me an opportunity to expand my knowledge and expertise by innovating new dishes and flavours. I get to share them with my students on a daily basis.
Who does the cooking at home?
On weekdays, my wife manages all of it. I generally cook over the weekend.
So, what kind of food over weekends?
It could be Pizzas, Satteys or Barbeques. I enjoy making fusion dishes such as Pasta Biryani, Pav Bhaji Lasagna, Palak Paneer Samosa, GajarHalwa Springrolls with Stawberry Rabdi.
Chef Kavi currently works as Head of the Department at the Kohinoor College of Hotel & Tourism Management Sudies, Mumbai and is a Food & Wine Consultant for Restaurants & Hotels.
